High-Protein Gluten-Free Mini Waffles

Light, fluffy, and packed with plant-based protein, these gluten-free mini waffles are a simple and nutritious choice for breakfast or a sweet snack. Quick to make, perfectly portioned, and easy to customize with your favorite toppings.

Ingredients:

  • 3 eggs

  • 50 ml plant-based milk (we used rice)

  • 40 g plant-based protein powder (vanilla or cookie flavor)

  • 80 g gluten-free Schär Mix C flour

  • 5 g baking powder

  • Toppings of choice (e.g., honey, peanut butter, hazelnut butter, no-added-sugar chocolate spread, coconut, fruit…)

We love these protein waffles as a breakfast option, but they also work perfectly as a snack. The batter makes enough for two people.

In a bowl, first whisk the eggs. Add the plant-based milk and mix well. Then add the dry ingredients (protein powder, flour, and baking powder). Stir until you get a smooth, homogeneous batter.

Pour the mixture into a waffle maker and bake until golden brown.

Add toppings as desired, but keep them moderate — for example, about 3 g of honey per waffle or 10 g of peanut butter is more than enough.

This batter makes about 10 mini waffles, each with around 70 calories and 5 g of protein.
