Chicken with Turmeric Rice and Vegetables
Simple, protein-packed meal featuring tender chicken breast, colorful vegetables, and fragrant turmeric rice. Nutritious, filling, and easy to prepare, it's a great option for meal prep or a healthy lunch.


Ingredients
500 g chicken breast
120 g rice
200 g mixed vegetables (fresh or frozen)
1 teaspoon turmeric
10 g olive oil
Salt or seasoning, to taste
Instructions
Cut the chicken breast into bite-sized pieces and season with salt to taste. Cook in the oven or an air fryer. We recommend using an air fryer at 200°C (390°F) for 17 minutes.
Meanwhile, heat the olive oil in a pan over medium heat. Add the mixed vegetables and sauté for a few minutes until they begin to soften. Stir in the rice and add water (use approximately three times as much water as rice). Simmer gently until the rice is fully cooked and has absorbed most of the liquid.
A few minutes before the rice is done, add the turmeric and additional salt if desired. Stir well to distribute the spices evenly.
Serve the chicken alongside the turmeric rice and vegetables.
Serving Suggestion
This recipe makes 2 servings and works well as a balanced lunch or dinner. For a more indulgent meal, enjoy it with a glass of red wine.
